Q. Why does my fried food turn too dark?
A. Check your frying oil temperature with an accurate thermometer. It should be close to 350 – 360oF (170 – 175oC).

Q. Sometimes my fried portions come out too greasy. Is there anything I can do to reduce customer complaints about this current area of their concern?
A. If you are buying an already coated food product, its fat-absorption characteristics may be locked-in due to the processor’s manufacturing techniques and coating’s formulation. If you overload your fryer you may be contributing to the problem, so fry only a few pieces of product and see if it still happens.
